A Green Focus on Sustainable Foodservice and Hospitality – Future of Hospitality and Foodservice 

At FHA-HoReCa 2024, there is a Green Focus on Sustainable Foodservice and Hospitality – Future of Hospitality and Foodservice. Sustainable tourism in the Asia-Pacific region is increasingly gaining momentum as both a necessity and an opportunity within the hotel industry. In earlier years, those measures were limited to superficial measures such as opt-in linen changes and glass water bottles. Nowadays, properties are now moving towards integrating more rooted, innovative measures in their infrastructure. 

This is most evident in Singapore, where over 40% of hotels are steadfastly test-bedding new technologies and innovations while pursuing Global Sustainable Tourism Council (GSTC) certification. At FHA-HoReCa 2024, they are debuting the Future of Hospitality Seminar, supporting these efforts and gathering hospitality industry leaders to discuss key themes shaping the sector.

FHA Bakery Challenge

Making its debut in 2024, the FHA Bakery Challenge will spotlight budding bakers with a “Grand Breakfast” theme to redefine breakfast, while the FHA Dessert Challenge, co-organised with Singapore’s Pastry Alliance, aims to elevate the artistry of 30 top pastry chefs.

FHA Barista Challenge

Southeast Asia region is well known for their coffee craze. Catering to this coffee craze in FHA-HoReCa 2024, they are also debuting FHA Barista Challenge, featuring four competitions:

• Barista Speed Challenge
• Cafe Menu Challenge 
• Coffee Brewing Challenge 
• Coffee Mixology Challenge 

All designed to test baristas’ versatility and creativity. 

Alongside these new competitions, there are also the Asian Gelato Cup and Asian Pastry Cup, where leading chefs from across the continent compete to qualify for the Gelato World Cup in Italy and the World Pastry Cup in Lyon. 

Esteemed judges assessing these remarkable creations include: French World Pastry Champion (2009 & 2017) Marc Rivière, WACS-approved Pastry International Judge Kenny Kong, and Italian Master Gelato Chef Sergio Colalucci.

Singapore’s First Global Chefs Challenge 

The ultimate showdown, FHA-HoReCa is partnering with Worldchefs and Singapore Chefs Association, to host Singapore’s first Global Chefs Challenge Finals in 34 years featuring 4 categories:

• Global Pastry Chefs Challenge
• Inaugural Global Vegan Challenge

While the global pandemic Covid-19 has caused massive impacts to the world economy, Nyetimber and the English wine industry in general continues to be a UK success story despite the challenges faced during this Covid-19 situation as consumer demand doesn’t show any sign of slowing. Total production increased from 5.9 million bottles in 2017 to 10.5 million bottles in 2019. In terms of sales, 5.5 million bottles were sold in 2019, an increase of 70% over the prior year – and international sales accounted for 10% of this. The total area under vine in the UK now stands at 3,579 hectares, up 83% since 2015. 

Cherie Spriggs, Head Winemaker at Nyetimber commented: “Having embraced the required social distancing measures we are looking forward to a bumper harvest as we have benefitted from good growing conditions this year, in particular the warm and dry summer weather which got us off to a great start. We expect 2020 to once again bear fruit of high quality for our wines.” 

Head Winemaker Cherie Spriggs was named ‘Sparkling Winemaker of the Year’ at the International Wine Challenge 2018 – one of the most highly-regarded wine competitions in the world. She was the first woman as well as the first person outside the Champagne region of France to win this prestigious award. 

Nyetimber is expected to produce around one million bottles from this harvest and forecasts their production level to reach two million bottles within the next few years as more of their vineyards, including the recently planted 42 hectares of new vines in Kent bear fruit. They are also expected to sell two million bottles a year by 2030, marking a significant uplift on current levels.

The lockdown has helped to significantly increase the online sales of Nyetimber via the company’s website as the demand for home consumption has increased and the ability to buy single bottles has appealed to consumers.

The highly skilled pickers of Nyetimber is going to carefully progress across the estate’s vineyards ensuring each bunch of Chardonnay, Pinot Noir and Pinot Meunier grapes is perfectly ripe and of the highest quality, on which Nyetimber prides itself. After each bunch of grapes is carefully picked, they will make their way into Nyetimber’s state-of-the-art pressing centre which incorporates gravity flow to ensure the highest quality of juice is extracted. 

Nyetimber is regarded as the pre-eminent English Sparkling Wine brand and it has been a pioneer of the English wine movement winning multiple international awards. Nyetimber wines are seen as world class, and while its sales have grown significantly in recent years, the growth has not come at the expense of quality.

This bar, Risky Business, is inspired by Holloywood hearthrob Tom Cruise and paying tribute to his iconic films and acting from his movies “Risky Business” and “Cocktail”. Risky Business is a cosy and classy bar with a floor size of 1,100 sq ft 80 seater bar located at Duxton Hill. Enter into Risky Business, you might be brought back in time, with the various Tom Cruise movie posters on the walls of Risk Business Bar. If you are a Top Gun movie fan, all the movie posters there would definitely bring you back nostalgic memories.

Inside Risky Business Bar, the bright and colourful walls would draw your attention, the decoration draws inspiration from the movies “Risky Business” and “Cocktail”, this is the brainchild of Jamie Gripton, who is also behind Pandora’s Garden, Singapore’s first rose bar at Ann Siang House.

A heady pour of rum and bourbon, the cocktail is sure to receive a standing ovation like some of Cruise’s critically-acclaimed hits such as ‘Vanilla Sky’, ‘Eyes Wide Shut’, or ‘Born on the 4th of July’. The drink, named after the famous quote from 1985 action drama Top Gun, is inspired by the classic Old Fashioned.

Other stars on the menu, include You Can’t Handle the Vermouth inspired by the movie ‘A Few Good Men’ that featured a heavyweight cast of Cruise, Jack Nicholson, Demi Moore, and Kevin Bacon among others. The cocktail is a twist on the Negroni and the highlight is the napkin stamped with the words “You can’t handle the Vermouth” that comes with the drink in a play on the famous quote from the movie.

If you are feeling hungry and looking for something to eat, there are nibbles and hearty fare from L’Entrecôte, the French steakhouse right next door. Nothing is ‘Mission Impossible’ for this Tom Cruise loving crew, as Risky Business is Tom Cruise fanatic fan and inspired!
